One Damn Thing

PittGirl positively ID'd as a gingerbread cookie.

So the bake off was not awesome. The dough would not roll out evenly and the cookie cutter, although ridiculously cute, was so small the cookies would not pop out onto the cookie sheet. Instead I had to pry out over 80 cookies with a butter knife. Since the dough wasn’t even, the cookies were different thicknesses and baked at different times – many poor gingerbread people were burnt to a crisp.

Finally the main reason for this exercise in baking futility, the excited kid, stayed excited through about seven cookies stamped out of the dough and exactly two decorated cookies. Between prep, baking, decorating, and cleanup, this project took a little over two hours, sadly leaving no time for sugar cookies this evening.

With all that said, the Arrowhead Mills gingerbread mix makes TASTY cookies. I think the next time instead of fighting with the cookie cutter, I’ll prep the gingerbread dough like the slice and bake dough. Although instead of decorating with sprinkles, I might sandwich them, maybe with icing or MAYBE with a yummy lemon curd.
